A cowboy walked into a restaurant in Amarillo in 1960 and said he was hungry enough to eat a whole cow.
Bob Lee decided to find out if that was true.
Lee had opened the Big Texan Steak Ranch on Route 66 that same year, right down the road from the Amarillo stockyards. Every Friday was payday at the yards, and the cowboys came in still dusty from work, cash in their pockets, and a serious appetite. Lee cashed their checks, poured twenty-five-cent beers, and watched them try to out-eat each other every single week.
One Friday in 1962, he pushed some tables together in the middle of the dining room and made it official. Whoever could eat the most one-pound steaks in an hour won the pot and ate free. The cowboys lined up.
One man never slowed down. After his third steak, he asked for a salad and a shrimp cocktail. After his fourth, he wanted a baked potato and a roll. By the time the hour was up, he had put away seventy-two ounces of steak and every last bit of the sides.
Bob Lee stood up and announced that from that day forward, anyone who could match what that cowboy just did would eat for free.
His son Bobby said later that his father never thought he would actually have a taker. The next week, two cowboys showed up wanting to try it, and the place went crazy.
When Interstate 40 came through and bypassed Route 66, Lee refused to be left behind. He and his sons tore down the old barracks from a World War II prisoner-of-war camp at the Amarillo Air Force Base and used the lumber to build the new Big Texan alongside I-40. The building that welcomed a generation of travelers was framed with wood that had once housed German prisoners of war in the Texas Panhandle.
Today, the Big Texan has a sixty-foot neon cowboy out front, a Texas-shaped swimming pool next door, a live rattlesnake in the gift shop, and a raised platform in the center of the dining room where challengers sit under bright lights while two hundred strangers watch them try to eat four and a half pounds of beef in sixty minutes.
Nearly a hundred thousand people have tried it.
A 128-pound mother of four once ate three of them in twenty minutes and was reaching for a fourth when the Lee brothers called it.
That is Amarillo. That is the Big Texan.
