🍞🦋 Did you know? Some breads are made with bromated flour, which contains potassium bromate—a dough improver traditionally used to strengthen gluten and help bread rise. But this ingredient has raised concerns because bromate can interact with the body’s iodine-dependent thyroid system.
The thyroid needs iodine to produce the hormones T4 and T3, which help regulate metabolism, energy production, temperature, and many other processes. Bromate belongs to the same broader chemical family as other halogen ions, and research has investigated whether exposure can interfere with iodine utilization and thyroid function.
Animal and experimental research has found that potassium bromate can affect thyroid-related processes, particularly at higher exposures. Bromate is also notable because it can cause oxidative stress and has been classified as a possible human carcinogen based largely on animal evidence.
That’s why potassium bromate has been restricted or prohibited as a food additive in many countries, while its use remains permitted under certain conditions in others.
The interesting part is that bromated flour isn't always obvious from the front of a bread package. It may appear in the ingredient list as “potassium bromate” or “bromated flour.”
