Cheese exists because of the fourth stomach of a calf.
Eight thousand years ago, somewhere in the near east, milk went into a bag made from a young ruminant's stomach lining. Somebody walked a distance in the heat, opened it, and found the milk had set. Not spoiled. Set. Firm curds you could lift out, and a thin liquid left behind.
We have the receipts. Perforated pottery strainers from Poland, around 5,500 BC, still carrying the chemical signature of milk fat. Somebody was making cheese in central Europe before the wheel, before writing, before the pyramids, at a time when most adults could not even drink milk without regretting it.
That was the point. Curdling drops the lactose out with the whey. The first cheese was how a lactose-intolerant continent got at dairy, four thousand years before humans evolved the gene to digest dairy as adults.
What did the work was chymosin, an enzyme a calf makes for one job: setting its mother's milk so it stays put long enough to be digested. The calf's own tool for holding on to milk became our method for keeping it through a winter.
And think about what that solved. Milk is a few hours of food that arrives twice a day and then turns. Cheese is that same milk, concentrated ten to one, keeping for a year and travelling. A summer's grazing, held in a form you can carry over a mountain, defend in a siege, trade, tax, or leave to your children.
Parmigiano is that, aged three years. Cheddar is that, cut and stacked by hand. Roquefort is that, plus a cave. Comté is that, plus a mountain, a herd on summer pasture, and rules nobody is permitted to modernise.
Eight thousand years of people getting this right, and you have some in the fridge.
